1. Field of the Invention
This invention relates generally to proteinaceous food compositions and more specifically to a method of preparing such compositions having a protein content of about 10-40% by weight.
2. Description of the Prior Art
The protein content of many meat and poultry products is less than about 10% by weight. This requires manufacturers of such products to add a portion of the protein to increase the amount thereof in their products. This results in increased cost as well as increased weight and volume in packages of the products.
One approach that has been taken to reduce the added protein content is to mix the protein with a starch containing material, for example, cereal starches, and to prepare a dough-like mixture that can then be added to a meat or poultry product during the manufacture thereof. One example of such a protein-starch mix can be found in U.S. Pat. No. 3,535,316. The protein and starch are mixed in a ratio of from about 20:1 to about 2:1 by weight to obtain a composition which when heated and cooked, will impart significant amounts of protein to a subsequently formed and cooked meat or poultry product.
Another approach that has been suggested to reduce protein content is to include, in a meat or poultry product, a liquid soy protein concentrate and a cereal starch. Such an approach is shown in U.S. Pat. No. 3,948,587.
The protein concentrates described in the above-identified patents are made by dissolving a high protein soy material in a caustic alkali solution, then reducing the pH of the solution to about 2.8 to 3.2 and at this pH subjecting the solution to a strong continuous ultrasonic radiation so that insolubles are removed, and finally recovering the remaining soluble protein material.
All of the above-described approaches to reducing the protein content in meat or poultry products, as they are known, suffer from certain drawbacks. The addition of the protein to a starch containing material, for example, cereal starches, provides a product that is often to rich in starch which, upon boiling, creates a cooked product with a less palatable flavor. The protein or soy material can create a product that is too rich in protein and thus results in a product with a harsh flavor.
